Due to re-allocation of resources, we have decided to discontinue the service of the Cooking Studio and the Caring Shop in order to develop newer ministries.
The Cooking Studio has been a great success in the last 2 years and I enjoyed it as much as every participant did. I hope that your passion for cooking will not fade even though we cannot cook together anymore, and I hope you can continue to bless others with the cooking skills that you learned with us.
I have started a new blog at http://cookingsecret.blogspot.com and I'll begin to post recipes that I collected these years at the Cooking Studio on this blog to share with all who are interested. And if you have any question about cooking, I'll be glad to answer them on the blog too.

Summer Green Tea Soba with Mussels 夏日青蠔綠茶冷麵

Ingredients
Serves 8 as an appetizer

1 lb frozen mussels
8 oz dried green tea soba
3 tbsp oyster sauce
3 tbsp Japanese soy sauce
3 tbsp fine bonito flakes
1/4 cup pitted black olives, sliced
1/2 cup sun-dried tomatoes in oil, drained and sliced
4 tbsp minced cilantro leaves, to garnish

Procedures

• Defrost mussels. Bring to boil a large pot of water, and add mussels. Cook until done, about 5 minutes. Drain and remove mussels from shells. Set aside and let cool.
• Boil green tea soba in a large pot of boiling water for 5-7 minutes or until al dente. Drain and rinse with cold running water until completely cooled. Drain and set aside.
• Combine oyster sauce, soy sauce and bonito flakes in a small saucepan and stir to mix. Bring sauce mixture to a boil, then simmer for 5 seconds, remove from heat and set aside to cool.
• Place noodles, black olives and sun-dried tomatoes in a mixing bowl. Reserve some sauce, and pour the rest into the bowl. Toss gently to mix thoroughly.
• To serve, place noodle on a plate. Top with mussels, and drizzle with reserved sauce on top. Garnish with cilantro leaves.

Tips

• Bonito flakes are shavings of dried, cured tuna fish and have a smokey taste almost like fine ham. They are available in Japanese supermarket in coarse or fine flakes. Coarse flakes are used for making dashi stock.
• The combination of ingredients may seems odd to you, but believe me, the taste is very blended and surprisingly delicious!

Make a Salad

Summer is approaching, and your appetite may drop. Why not make a salad? Try this simple recipe so that you don't have to stuck with the store bought salad dressing made of chemicals.

Simple Mixed Salad with Homemade Asian Vinaigrette
簡易雜菜沙拉配私房亞洲風醬汁

Ingredients
Salad
1 lb washed mixed organic salad leaves
Vinaigrette
1/2 cup olive oil
1/2 cup lemon juice
3 tbsp mirin (a Japanese seasoning)
1 tbsp sugar
1 tbsp soy sauce
1 tbsp sesame oil
1 inch piece of fresh ginger, grated
salt and pepper to taste

Procedures
To make vinaigrette, put all ingredients in a jar with a tight lid. Shake until all blended.
To serve, mix salad leaves with vinaigrette, put on a plate.

Tips
You can adjust the taste of the vinaigrette by changing the amount of each ingredient. Do some experiment to create your best proportion. Try adding some honey too.
Make sure the salad greens are really cold!
You can also use the vinaigrette to marinate chicken breast. Grill them with your broiler and you'll have Grilled Chicken Salad!

Steak Yakitori with Eggplant 牛扒茄子照燒串

Ingredients
Serves 8

12 oz rib eye steak or prime rib steak, cut into 1-inch cube, about 18 cubes

2 tbsp sesame oil

1 small Japanese eggplant, cut into 1/2-inch cube

pinch of salt

bamboo skewers

1/2 tbsp butter

1/2 tbsp vegetable oil

Yakitori Marinade:

4 tbsp Japanese soy sauce

2 tbsp Chinese dark say sauce

1.5 tbsp sugar

1 tbsp lemon juice or cider vinegar

1 tsp black pepper

Procedures

Combine all marinade ingredients in a large mixing bowl and stir well until sugar is dissolved. Marinate beef in marinade for at least 2 hours.

Put a large skillet over high heat. Mix eggplant with sesame oil and a pinch of salt, then stir fry in hot skillet until softened.

Thread beef cubes on bamboo skewers.

Heat butter and oil in a non-stick skillet over high heat. Sear skewers on each side for about 30 seconds or until brown on the outside but still pink inside. Serve hot with eggplant.

Tips

You can also set the skewers over the barbeque.

Pre-soak the bamboo skewers in water for 20 minutes to avoid burning the skewers.

Wicked Sweet Indulgences Course

We just finished the Wicked Sweet Indulgences course tonight. It is really an indulgence! Most of the participants cannot finish the delicious desserts and have to take home some of them for consumption later. Wicked Chocolate Pudding

Today, I am finalizing the recipes for the "Wicked Sweet Indulgences" dessert class. Freshly came out of the oven are my Self-Saucing Chocolate Puddings and my colleagues at the office all rushed over to get a taste of them (in fact they asked me almost every 5 minutes whether it is ready when I was making them...). They tasted just like heaven with a scoop of French Vanilla icecream. You can see this on their facial expression.

Desserts of the World - French - Crepe Suzette

The second course in the "Desserts of the World" series is coming up this Sunday April 23. Many people ask what is "Crepe Suzette"? According to Wikipedia, it is "a typical French and Belgian dessert, consisting of a crêpe with a hot sauce of caramelised sugar, orange juice, lightly grated orange peel and liqueur (usually Grand Marnier) on top, which is subsequently lit. The most common way to make Crêpe Suzette is to pour liqueur (usually Grand Marnier) over a freshly baked crêpe with sugar and light it. This will make the alcohol in the liqueur evaporate, resulting in a fairly thick, caramelised sauce. In a restaurant, a Crêpe Suzette is often prepared in a chafing dish in full view of the guests." A great soup for spring!

Light Cream of Daikon Soup
Serves 8

Ingredients
6 lb daikon radish (約三條), washed, skinned and cut to large chunks
1 lb russet potato (約兩個), washed, skinned and cut to large chucks
1 bunch green onion, cut to sections
2 slices fresh ginger
8 tsp hondashi powder
1 tbsp Japanese soy sauce
6 cups water
1/2 cup heavy cream
salt and pepper to taste
cilantro leaves for garnish

Procedures
In a large pot over high heat, sauté green onions with a little oil. Add daikon radish and cook for 2 minutes.
Add water, hondashi powder, potato and ginger. When soup is boiling, turn down heat and simmer for 45 minutes, or until potato and daikon are both fork tender.
Reserve 2 cups of daikon chunks. Process the rest of the soup in food processor until smooth. May need to do this in batches.
Put soup back into the pot. Heat until boiling and remove from heat. Stir in 1/2 cup heavy cream. Add salt and pepper to taste. If desired, can add 1/2 tsp or more prepared wasabi.
To serve, put soup in individual bowls. Garnish with reserved daikon chunks, drizzle of cream and cilantro leaves.

Tips
This is a very comforting dish. The taste is fresh and mellow. To add more punch, try adding some wasabi or mint.
Adjust the time you process the soup in the food processor to control the smoothness of the soup. Some people like it more chunky, some people like it more smooth. Try and find your own preference.

Strawberry Napoleon Cake Class

The long-awaited Strawberry Napoleon Cake class was held successfully last Saturday. We all learned to make homemade puff pastry, custard cream and crunchy almonds, and we each put together our own Napoleon Cake. The fragrance of baking puff pastry filled the whole Room C and made everybody hungry! If you were in the class and have further questions when trying to make this cake at home, you're welcome to post your questions here and we'll be happy to answer them. Coconut Panna Cotta

Summer is approaching! Trying making this cool and comforting desserts to pamper your loved ones in the heat!

Coconut Panna Cotta

Ingredients (Serves 6)
1 cup milk
1 tsp vanilla essence
1.5 tsp gelatin powder
4 tbsp sugar
1.25 cup coconut milk

Procedures
Put milk in a small saucepan. Sprinkler gelatin powder over it and let sit for a few minutes until gelatin becomes transparent.
Put saucepan over low heat, until gelatin melts completely. Add sugar and vanilla, mix until sugar dissolve completely. Remove from heat. Add coconut milk and stir to combine. Set aside to cool. Divide mixture among 6 small cups. Refrigerate until set, about 2 hours. Serve cool.

Cooking Party FAQ

How much does a cooking party cost?

$20 plus material fee as listed above per head. 10% off for group of 15 or more.

Minimum 8 people. Maximum 25 people.

Price includes tuition, full portion of food for each guest and rental for the party room at Room C. GST will be added on top.

How long do we need to book in advance?

At least 3 days in advance so that we have enough time to prepare. However, the availability of the party room as well as our instructor is also an issue. Therefore, book as early as possible.

Can we choose the date and the menu of our party?

Yes, you can choose the date you want, but only if the party room is available. Therefore, again, book as early as possible.

You can customize the menu as well. You can choose from the menu above, or mix and match dishes from different menus.

Do we get to cook, or do we just watch the instructor cook?

It’s your choice. If you’re confident, you can do your own cooking. We’ll provide all the ingredients, utensils and recipes for your culinary adventure. However, if you need more instruction, our instructor will be happy to demonstrate for you.

Can we drink wine at Room C?

Sorry but no. Alcohol consumption is not allowed in Room C as per government regulations.

What else can we do after dinner?

Anything except washing the dishes. Room C is equipped with all kinds of fun party games. You can also bring in your own games (how about video games?). Maybe just chatting over coffee and dessert with your closest friends is already most enjoyable.

Can we rent the party room at Room C by the hour without employing the cooking party service?

Yes you can. The Party Room at Room C is available for rent for private functions such as birthday party or wedding shower. Please contact AFC Vancouver at 604-278-0642 for information.

Can you organize other kinds of party at Room C besides cooking party?

Yes. Full-service party organizing service is available. Please contact Tov Events at 604-244-8684 for more details.

Will the instructors at the Caring Shop host cooking party at other locations such as my home?

Current we are not available for parties outside of Room C.

Do you offer catering service?

Not now, but we are planning to offer catering service in the future.

SFU CSU Cooking Party

Last night, the Chinese Student Union of SFU held a Dessert Cooking Party last night in Room C. We made Strawberry Napoleon, Chocolate Truffles, New York Cheesecake, Green Tea Custard Pudding and Apple Galette. All 38 participants are having fun getting their hands dirty.

A Funny Game for Party and Small Group

Here is another fun game for parties and small group. "You're Pulling My Leg" is a cheating and gambling game - in a healthy manner. Each player is going to answer a question on the draw card, but whether he/she's telling the truth is pre-determined by a roll of dice. All the other players are going to guess whether he/she is telling the truth by betting. It is a fun way to get to know each other, and the more people playing together, the more fun you'll have!

Things - the hilarious small group game

My small group was playing this game called "Things" a few weeks ago and we did have a great time! This is how you play it: we choose a question from the deck, and everybody write down a secret answer. The answer is then read out and we have to guess who wrote what. It is just hilarious because you always discover the unknown dark humorous side of the least expected people. If you are searching for a great game to play in your small group or party, this will be perfect.
